Potato crusted salmon Recipe for Atlantic Salmon

Ingredients: Bag of your favorite potato chips, I prefer plain natural baked, others that can be used are fritos( especially for catfish), salt and vinegar, ranch etc... some eggwash, i use just the whites, salt& pepper
Directions: Heat a cast iron or non stick pan add your preferred type of cooking oil, I use peanut or olive oil. season the fish, put the chips in a food processor and pulse it, You can leave it chunky or make it powder, there is more visual appeal if you leave some bits and pieces whole, dredge the top of the fish in eggwhite and then the chip mixture. Lay top side down in the oil for 5 minutes turn and cook bottom for 3 minutes depending on the size of the salmon steak this all varies. serve medium rare or medium for best results and cook over a low to medium heat, since the chips are cooked if the oil is too hot they will burn...slow and steady
Other Notes: There should be no reason to turn this fish more than once, peek under the side without turning to see where your color is at during the cooking process. any fish can be pan fried this way including whole fish.
